Fight the heat with quick recipes


The season has changed and is making us tired. Under the heat everyone becomes devastated when you return home from work or school. Of course it’s essential to drink at least 2 liters of water and add more fruits and vegetables to make you stay cool.

Here we have 2 quick recipes to satisfy both your hunger and thirst for those tired evenings. One is innovative aval or beaten rice, made with chick peas and the other a mock sugarcane juice made up of jiggery and lemon. Quick to whip up, the juice is packed with iron and vitamin c. enjoy and stay cool

Power Aval
Ingredients:
1/3 cup kabuli chana or chickpeas
1 tbsp oil
1 onion, chopped
1 green chilli, chopped
1 tomato, chopped
2 tsp lemon juice
Salt to taste
2 cups aval (beaten rice)

For the garnish:
2 tsp chopped coriander

• Wash and soak the kabuli chana for about 6 hours.
• Pressure cook the chana: drain and keep aside
• Heat the oil in sauce pan. Add the onion and green chilli and sauté till the onions turns translucent
• Add the tomato and cook for 2 minutes
• Add the kabuli chana, lemon juice and salt and mix well. Remove from the fire
• Sprinkle some water on the aval to moisten it and add it to the kabuli chana mixture
• Mix well and garnish with the coriander. Serve hot

Mock sugarcane juice

Ingredients:
2 tbsp jaggery (sharkara)
1 ½ tbsp lemon juice
½ cup water
¼ tsp grated ginger
Pinch of salt (optional)
7-8 ice cubes
• Combine all the ingredients and blend till frothy.
Serve chilled.
